With characteristic ripe fruit aromas, smooth acidity, and freshness this white variety may be aged in oak barrels. Casillero del Diablo has created a unique Chardonnay with grapes from the Casablanca Valley. The vineyards receive the cool breezes from the Pacific Ocean, and develop a mineral style due to the unique composition of its soils.

Casablanca, Rapel (coast), and Limarí Valleys

Casillero de Diablo Chardonnay comes from vineyards located just a few kilometers from the Pacific Ocean. Constant sea breezes moderate the temperatures and result in remarkably fresh wines. The soils in the Limarí Valley lend an elegant mineral touch to the Chardonnay, while Casablanca contributes fruit flavors, such as peaches.

Soil
Mainly alluvial with some colluvial soils.
Ageing
Aged in French oak barrels and fermented in stainless steel tanks.
Colour
Pale greenish yellow with golden and bright hints.
Aroma
Fresh, shows the fruity character from the beginning. Pineapple and peach together with small touches of hazelnut given by the French oak barrels.
Palate
Wine with good structure, an excellent balance, fresh and lively acidity. Medium bodied with a long and dry end palate. At the end you find green pear and delicate hints of white peach complemented with toast impression.
Food Pairing
Perfect to enjoy with delicate fish such as grilled sea bass, sole or turbot, garnished with capers or herbs creamy sauces.
